    When you get your permit they should tell you how big your space is and how many people you can have in the bar at one time..order 3/4 of the amount of people you are allowed to have..Worked in restaurant and that’s how they did it. As an example if your space holds 100 people then u need 75 of each Item. It seems like a lot , but sadly some will be broken and some will be stolen..this allows you to have extra.

    You hire a bar manager. The amount of all these glasses depends on the size of your restaurant and what types of drinks you serve as special drinks. What is your clientele demographic. You need to know these things or you are going to was a lot of money on glasses you don’t need. A chef or bar manager can help you out with all of these little details that’s why they get the big bucks, to save you money in the long run.
